Ingredients
  1. 2 cups brown rice (uncooked)
  2. 3 carrots, diced
  3. 3 garlic cloves, diced
  4. 1 red bell pepper, diced
  5. 2 zucchini, sliced & quartered
  6. ½ cup crimini mushrooms, sliced
  7. ½ cup broccoli florets
  8. 1 cup water
  9. 2 cans garbanzo beans
  10. 1 can full fat coconut milk
  11. 2 tbsp nutritional yeast
  12. Salt & pepper to taste
  13. (optional) crushed red pepper
Instructions
  1. Cook rice on low for 45 minutes.
  2. While rice cooks, sauté vegetables in water until tender in a separate pot.
  3. Add remaining ingredients and simmer for 20 minutes.
  4. Serve over brown rice.
