summer cucumber salad

Serves 8
Perfect summer side salad.
- 2 cucumbers
- 1/4 cup red onion, sliced
- 2 tbsp apple cider vinegar
- 5-8 drops of liquid stevia extract (stevia rebaudiana)
- 1 tsp crushed red pepper
- Sea salt to taste
- Thinly slice cucumber (I suggest a mandolin or spiralizer)
- Add remaining ingredients, toss and serve.
