Ingredients
  1. ½ cup quinoa, cooked
  2. ½ cup broccoli florets
  3. ½ cup mushrooms, chopped
  4. ½ cup cherry tomatoes, halved
  5. 1 cup baby spinach
  6. 1 tbsp avocado oil or olive oil
  7. 1/8 tsp sea salt
  8. Black pepper to taste
Instructions
  1. Heat avocado oil in pan over medium heat.
  2. Add broccoli and mushrooms, sauté until tender.
  3. Add quinoa, salt, pepper, tomatoes, and spinach to stovetop pan and mix.
  4. Allow to cook for 2-3 minutes then serve.
